This korma is not like the ones you will find in an Indian restaurant. It draws on spices from China, India and Malaysia, has no almonds and is a touch hotter than what we consider korma heat in the west. The spicing really shines through and the heat is tempered by a fair amount of coconut cream. The word korma simply refers to the cooking method.
I use our own mild Malaysian curry powder for this dish should you wish to recreate it at home.
